As a student myself, I know there are usually better things to be doing besides cooking. Scouring through cookbooks and websites can be tedious but finding something that is simple and tastes good can also prove challenging. All this hassle before I've even stepped into the kitchen.

That's why I have decided to put together 5 great recipes that are quick and easy to prepare, and on a shoestring budget for all you students out there!

1. Mug Quiche

Serves: 1

  • 1 egg
  • 11/2 tablespoons of milk
  • A pinch of salt and pepper. To taste
  • ¼ of a bagel (or another bread type)
  • 2 teaspoons of cream cheese
  • 1 slice of ham

Beat the egg and milk together in your mug adding a pinch of salt or pepper. Take the bagel (or another bread type), tear into small pieces and stir in. Add the cream cheese and add a few small pieces of ham. Microwave for 1 minute 20 seconds, and garnish as you wish.

2. Super Nachos

Serves: 6 

  • 450g beef mince
  • 1 onion, finely chopped
  • Salt and freshly ground black pepper, to taste
  • 275g grated Cheddar cheese
  • 400g tortilla crisps
  • 1 fresh jalapeño, sliced (or jarred jalapeños to taste)

Ready in:20min 

In a large pan, brown beef mince with onion, salt and pepper over medium heat; drain off excess fat. Arrange tortilla chips on a microwaveable plate. Spread beans over chips; layer with 1/2 the Cheddar cheese, beef mixture and remaining cheese. Arrange chillies on top. Microwave on medium-high until cheese has melted. Serve immediately.

Instead of the microwave, you can place the nachos under the grill till the cheese has melted.


3. Bacon Guacamole Toastie

  Serves: 1

  • 2 slices bacon
  • 2 slices sour dough bread
  • 1 tablespoon butter, room temperature
  • 64g cup mexican and cheddar cheese, shredded
  • 2 tablespoons guacamole, room temperature
  • 1 tablespoon tortilla chips, crumbled (optional)

Cook the bacon until crispy and set aside on paper towels to drain.

Butter one side of each slice of bread, sprinkle half of the cheese onto the unbuttered side of one slice of bread followed by the guacamole, bacon, tortilla chips, the remaining cheese and finally top with the remaining slice of bread with the buttered side up.

Grill over medium heat until golden brown and the cheese has melted, about 2-3 minutes per side.


4. Cheesy Beans

Serves : 1 

  • 1 Heinz® beans snap pot
  • Tabasco® sauce to taste
  • Worcester sauce to taste
  • 1 pinch dried oregano
  • black pepper to taste
  • 15g grated cheese

 Ready in:7min 

Remove the film from the snap pot. Take one heaped tablespoon of beans from the pot and eat immediately. Season the remaining beans with Tabasco® sauce, Worcester sauce, oregano and black pepper to your own taste though don't be shy with the amounts you add. Then mix thoroughly. Add grated cheese in stages and mix so the cheese is spread evenly though the beans. Place the pot in the microwave and microwave for 90 seconds on full power (based on 700W microwave). Remove from microwave and carefully stir. Allow to cool before eating straight from the pot!


5. Salted Caramel Mug Cake

  • 4 tablespoons all purpose flour
  • 4 tablespoons sugar
  • 3 tablespoons cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg - beaten
  • 3 tablespoons skim milk
  • 1 tablespoon vegetable oil
  • 2 salted caramels

Into a small bowl add: flour, sugar, cocoa, baking powder, salt, egg, milk, and vegetable oil. Mix to combine. Pour mixture into a regular sized coffee mug. Drop caramels into centre of mixture one at a time. Microwave on high for one minute and 30 seconds. If needed {if cake batter is still gooey}, microwave on high for up to an additional 30 seconds.
