  • 2 teaspoons dried yeast
  • 1 teaspoon of sugar
  • 150ml water or milk
  • 50g maize flour
  • 250g flour
  • 1 teaspoon of salt
  • 5 tablespoons olive oil
  • Paprika
  • Manchego cheese
  • Olives
  • Red onion
  • Chorizo

  1. Mix yeast and sugar in warm water
  2. Sift the flour into a large bowl, add the salt, then stir in the yeast and sugar liquid, and add the olive oil and paprika
  3. Mix together until all the ingredients are well blended, then knead the dough for about 2 minutes
  4. Put cling film over and around the bowl and leave in a warm place for around 20 minutes
  5. Once the dough has risen it should be about 50% larger than before), take it out and knead well to get rid of any air bubbles
  6. Cut the dough into four equal parts and knead each of them well
  7. Place one of the pieces on a lightly floured surface, and use a rolling pin to roll it into an elongated oval
  8. Spread Manchego cheese, tomato puree and add chorizo, olives and red onions
  9. Crimp edges up 1-2 centimetres, so your pide has a shape rather like a large stuffed eggplant
  10. Brush the sides and edges with olive oil, then bake for about 15 minutes at 250 degrees
